Overnight Oats!

This recipe has been a breakfast staple for me for years. Its very healthy and nutritious and starts your day off with good fiber and fruit and its delicious! Try it and ENJOY!!

OVERNIGHT STEEL CUT OATMEAL

4 cups water
1 cup steel cut oats (NO this is not your mother's old fashioned oatmeal!) Its also called Irish Oats.
1/4 cup dried cranberries
1/4 cup dried apricots, chopped
1/4 salt to taste

Combine all ingredients in a small slow cooker (crock pot). Cook on low with lid on for 7 to 8 hours. Stir before serving. I sprinkle a little cinnamon and nutmeg on top. Makes 4 servings.

You may substitute other fruit such as raisins, currants, apple, pineapple etc. (fresh or dried)

It refrigerates or freezes well.

Per serving yields about:
193 calories
35g carbohydrates
6g protein
9g fiber
78mg sodium

FOURTH anniversary!!

Greetings to all! Just wanted to give you a quick update.

Yesterday marked my 4th anniversary of taking control of my eating and making healthy choices for my well being! If you don't know me, please read my early postings to learn my story.

I continue to follow the program that has worked so well for me. I jumped on the scale and it read 223 pounds!! Thats right in my goal area! I have a goal of 225 pounds + or - five pounds. Thankfully I have been able to stay at my goal for the past 2-1/2 years!

To celebrate, my soul mate and I went to our favorite Mongolian grill and buffet. We have learned, over the years, to make healthy choices and to make those choices for our bodies sake and not to eat for our head! We are very fussy in building our meal! We eat well and we leave full, but we do not deviate from our criteria! NO, it is not boring!!!

This leads into a new direction for this blog. I am going to start to share some of our favorite recipes with you. Our eating style continues to treat us well so we'll be sharing our "secrets" with you from time to time!
