How about a great summer recipe?

Hi everyone!! I just came across a great summer salad! I made it today and I love it so I will pass it on:

RICE AND BEANS SALAD

Makes 10 main-dish servings.

1 1/2 cups uncooked brown rice
3 cups broth or water or a combination of each
1/2 cup fresh parsley or chives, cut up
1/2 cup diced onions or shallots
15 oz. can garbanzo beans, rinsed and drained
15 oz. can dark kidney beans, rinsed and drained
1/4 cup extra virgin olive oil
1/3 - 1/2 cup rice vinegar, to your taste

1. Place rice and water in pot. Cover and cook over medium heat until rice is tender, about 35 - 40 minutes.
2. Cool to room temperature.
3. Stir in the remaining ingredients.
4. Chill 2 hours or longer.

Serving size about 3/4 cup.
Per serving:
Calories = 250
Protein = 7g
Carbohydrates = 39g
Total fat = 7g
Saturated fat = 1g
Cholesterol = 0
Sodium = 206g
Fiber = 5 g

Mayo Clinic scores it as 1 serving vegetable; 1 serving carbohydrate; 1 1/2 servings protein and 1 serving fat.

As I said, I made it exactly as above, but it lends itself to your own additions. It calls for no salt and it doesn't need any. I enjoyed it as is.
