No cream - Cream of Tomato Soup!

Soup anyone? I know soup is suppose to be for a cold winter day, but I love soup any season! This is a very unique soup. Its quick, easy and very nutritious.

NO CREAM - CREAM OF TOMATO SOUP
1 - Onion diced and sauteed in 2 tbls of extra-virgin olive oil.
Add:
3 - Cloves of garlic, diced.
1 - Bay leaf.
1 - Pinch of red pepper flakes.
2 - Large cans of tomatoes.
3 - Slices of 100% whole grain bread, cubed.
Simmer 5 minutes then add:
1 - Tbls of brown sugar.
Remove bay leaf.
Puree in blender. Blend in three batches and add 1 tbls extra-virgin olive oil to each batch.
Put blended soup in pan and stir in 2 - Cups chicken broth. Heat to drinking temperature. Salt and pepper to taste. Enjoy!

That's it! It has good fiber with the whole grain bread. Good mix of tomatoes, onions and garlic. Its also rich in healthy extra-virgin olive oil (thats good fats) and very low (zero) in saturated fats. I hope you enjoy it as much as I do.
